Golden Noodle Soup
The cold weather seems to be rolling in, and for us, there’s nothing better than cosying up with a bowl of golden noodle soup that warms you from the inside out. Packed with immune-boosting garlic, ginger, and turmeric, this delicious soup is the perfect way to fight off the chill.
Ingredients:
• 4 garlic cloves minced
• 1 1/2 tsp grated/minced ginger
• 1 tsp lemongrass paste or purée
• 1 red chilli minced/grated
• 1/2 tsp turmeric
• 1 x 400ml tin of coconut milk
• 400 ml vegetable stock plus more if needed
• 100 g dried vermicelli rice noodles
• Soy sauce/tamari to taste
• 1/2 lime
• Coriander
• Tofu
INSTRUCTIONS:
In a large pot, sauté the garlic, ginger, lemongrass, chili, and turmeric with 2 tablespoons of water over low heat for 2 minutes until fragrant.
Stir in the vegetable stock and coconut milk, then bring to a gentle simmer.
Add the rice noodles, cover, and simmer for about 4 minutes until the noodles are tender. Add more stock if needed.
Season with soy sauce or tamari, and squeeze in fresh lime juice to taste.
Serve with crispy tofu and fresh coriander. Enjoy!
