Almond tahini cookies

These tahini cookies are savoury as well as sweet. They are perfect for an on the go snack, or with an afternoon tea. Tahini and honey bring out the best flavours in each other, the earthy creaminess of the tahini caramelises with the honeys sweet sharpness. Both of these ingredients create the perfect sticky bind for the almond flour, which when baked creates a thick crumbly biscuit texture.

Ingredients:

1/2 cup of sesame seeds

1 1/2 cups of almond flour

1/2 tsp bicarbonate soda

Pinch of salt

1/3 cup of honey

1/2 cup of Tahini

1 tsp of vanilla extract

Instructions:

1.Pre heat oven to 180 degrees

2. Line a baking tray with parchment paper.

3. Sift all the dry ingredients together into a bowl, mix and set to one side.

4. Weigh the wet ingredients and then combine with the dry.

5. The dough should be crumbly but if it is too dry add a little more tahini until you are able to roll the mixture into small round balls.

6. Put the tray in the oven for around 10 minutes, until they’re golden brown.
