Quinoa & Tahini cookies

An easy one bowl recipe. These cookies are a great healthy snack. Quinoa, buckwheat and chia seeds are all great sources of nutrients. We love to make these on a Sunday and have them ready for the week ahead.

Ingredients:

130g of cooked quinoa

120g of tahini

45g buckwheat flour

45g rolled oats

25g of chia seeds

60ml of maple syrup

1/2 tsp of bicarbonate of soda

40g of melted dark chocolate (I use rawhalo mylk & pink Himalayan salt)

Instructions:

  1. Preheat oven to 170 fan

  2. Mix all ingredients (apart from the chocolate) together in a bowl

  3. Scoop out the dough and roll in the palm of your hand into small balls

  4. Place on a prepared baking sheet

  5. Flatten cookie balls using the back of a wooden spoon

  6. Bake for 15 minutes or until golden brown

  7. Leave to cool for 10-20 minutes

  8. Melt the dark chocolate and drizzle over cooled cookies

  9. Leave the chocolate to set

  10. Enjoy!
