Quinoa & Tahini cookies
An easy one bowl recipe. These cookies are a great healthy snack. Quinoa, buckwheat and chia seeds are all great sources of nutrients. We love to make these on a Sunday and have them ready for the week ahead.
Ingredients:
130g of cooked quinoa
120g of tahini
45g buckwheat flour
45g rolled oats
25g of chia seeds
60ml of maple syrup
1/2 tsp of bicarbonate of soda
40g of melted dark chocolate (I use rawhalo mylk & pink Himalayan salt)
Instructions:
Preheat oven to 170 fan
Mix all ingredients (apart from the chocolate) together in a bowl
Scoop out the dough and roll in the palm of your hand into small balls
Place on a prepared baking sheet
Flatten cookie balls using the back of a wooden spoon
Bake for 15 minutes or until golden brown
Leave to cool for 10-20 minutes
Melt the dark chocolate and drizzle over cooled cookies
Leave the chocolate to set
